Juicing can happen in two ways: centrifugal or cold-pressed. SOHO Juice Company uses a high pressure “cold pressed” method: Fruits and vegetables are crushed together, then placed in a permeable pouch, which is subjected to tremendous pressure. This pressure squeezes out every last ounce of liquid, leaving behind pulp that is practically dry. Because cold pressing doesn’t produce heat, the process keeps more of the fresh ingredients’ nutrients intact.
Cold pressing prevents oxidation, resulting in a nutritious juice with an especially refreshing flavor. Nutrition has never been so delicious or convenient. The real advantage of cold-pressing is that it pushes almost every drop of nectar out of the fiber, producing a drink dense with hue, tang and nutrients.

Bottled and shelved juices are generally pasteurized or heated to some degree using the HPP process. By pressing our own juices daily using fresh produce, we have control over the quality of the fruits and vegetables that go into making them.
